SPICY SAUSAGE RIGATONI Jan 6 Written By Leena Ahmed https://www.youtube.com/shorts/PriJjMib6Og PrintSPICY SAUSAGE RIGATONIYield 4Prep time10 MinCook time20 MinTotal time30 MinIngredients1.5 lb sausage of choice (spicy lamb is suggested)1 lb Rigatoni1/2 onion, chopped medium1 Serrano pepper, chopped small3 cloves garlic, minced2 Tbsp butter1/4 cup vegetable broth1/3 cup heavy cream1/4 cup pasta water1 oz Parmesan cheesecilantro or parsley to garnishInstructionsDirections:Cook rigatoni pasta for one minute less than al dente according to package instructions. Drain when cooked and reserve pasta water.In a large pan over medium heat cook sausage for 13 to 15 minutes. No need to oil the pan, the fat from the sausage will start to come out as it cooks and coats the pan. Continue to break up and crumble meat as it cooks. When done, remove from heat and set aside.In the same pan (without cleaning or wiping down), add onion, serrano pepper, garlic, butter, and deglaze the pan with vegetable broth. Cook for 2 to 3 minutes, scraping down the bottom of the pan to use all the flavor.Next pour in heavy cream, parmesan cheese, 1/4 cup of the reserved pasta water, and the cooked sausage. Stir to combine. Add cooked pasta and stir until it’s fully coated in the sauce. Garnish each serving with cilantro or parsley, more parmesan cheese.
