OUTDOOR GRILLED SHRIMP

Ingredients

• 2 lb large shrimp
• 2 Tbsp olive oil
• Salt to taste
• 6 Tbsp butter
• 4-5 cloves garlic, minced
• 1 lemon, zest and juice
• 1 Serrano pepper, thinly sliced
• 1 Tbsp Cajun seasoning
• Cilantro to taste

Instructions

Directions:

1. Heat a grill on high.
2. Thread shrimp on skewers, about 8 per skewer. Drizzle with olive oil and salt.
3. Grill the shrimp for about 2 to 3 minutes each side, or until opaque. Once the shrimp turn pink and lightly charred, they’re ready to remove from the grill.
4. In a pan over medium heat melt butter, then add garlic and stir. Next, add lemon zest, serrano pepper, lemon juice, Cajun seasoning, cilantro and Stir.
5. Transfer shrimp into the pan and toss until covered in the sauce. Add more cilantro to garnish, lemon juice and zest to taste.
