SPICY CAJUN CHICKEN SANDWICH Aug 14 Written By Leena Ahmed PrintSPICY CAJUN CHICKEN SANDWICHYield 4 SandwichesPrep time20 MinCook time12 MinTotal time32 MinIngredientsFor the Chicken:4 large chicken breast cutlets 1 cup buttermilk ¼ cup cajun seasoning 3 Tbsp Louisiana hot sauce Relish:¼ cup pickled jalapeno ¼ cup banana peppers 4 while sundried tomatoes 1 clove garlic 1 tsp mustard ¼ cup fresh cilantro or parsley Hot Honey Sauce:2 Tbsp butter 1 tsp cajun seasoning 1 Tbsp louisiana hot sauce 2 Tbsp hot honey Dry Batter:1 cup flour ⅓ cup potato starch or cornstarch 1 Tbsp cajun seasoning1 tsp baking powder To assemble:4 hamburger buns, toasted 4 slices pepper jack cheese Spicy mayo Shredded lettuce Sliced tomato, seasoned with salt and pepper InstructionsIn a large bowl whisk together the buttermilk, cajun seasoning and hot sauce. Add the chicken cutlets to the mixture and let sit for at least 1 hour and preferably overnight. In a food processor, combine the pickled jalapenos, banana peppers, sun dried tomatoes, mustard, garlic and herbs. Blend on high till you get a paste-like consistency and then scrape into a bowl or jar and set aside int he fridge until ready to assemble. Preheat fryer oil to 350F. Remove the cutlets from the buttermilk and let excess moisture drip off, then add into the dry batter and press the flour mixture into the chicken to really adhere. Shake off any excess then fry the chicken in the 350F for about 8-10 minutes. While frying, combine the butter, hot sauce, cajun seasoning and hot honey in a sauce pan and bring to a simmer. Remove from heat and then brush the sauce all over the chicken cutlets. To Assemble: place the sliced cheese onto the chicken and broil on high just until the cheese melts, about 1-2 minutes. Smear a layer of spicy mayo on the bottom bun then a handful of shredded lettuce, a couple slices of seasoned tomatoes, a chicken patty then add a layer of the relish to the top bun and close the sandwich.
