SALMON AND RICE BOWLS Aug 14 Written By Leena Ahmed https://www.youtube.com/shorts/3HROBKKziow PrintSALMON AND RICE BOWLSYield 4Prep time15 MinCook time10 MinTotal time25 MinIngredients1 -1.5lb salmon filet, cut into 1 inch cubes Salmon Sauce2 Tbsp brown sugar 2 Tbsp ketchup 1 Tbsp soy sauce 1 Tbsp worcestershire sauce 1 tsp sesame oil 3 ice cubes 1/4 tsp salt1/4 tsp black pepper 1/2 tsp garlic powder 1/4 tsp cayenne 1/2 tsp paprika 1 large zucchini, cut into ¼ inch rounds 1 large red bell pepper, cut into 1/2 inch strips 1 large yellow bell pepper, cut into ½ inch strips ½ tsp salt ½ tsp italian herb seasoning 1 tsp soy sauce Cooked White rice White Sauce (see recipe on website) InstructionsIn a large skillet add the brown sugar and ketchup and set over medium high heat. Stir to combine and when the sugar starts to melt add in the soy sauce, worcestershire sauce and sesame oil. Stir and bring to a simmer, let thicken slightly, cooking for about 1-2 minutes then remove from the heat and stir in the ice cubes. Let the mixture cool completely. Toss the salmon cubes with the cooled sauce then the salt, pepper, garlic powder, cayenne pepper and paprika. When fully seasoned and coated evenly, lay out the cubes onto a sheet tray fitted with a wire rack lightly sprayed with cooking oil, this will elevate the salmon and help cook more evenly. (this can also be done in an airfryer basket) Bake the salmon at 425F (or airfry at 400F) for about 8-10 minutes until the salmon is crispy on the outside but still juicy in the center. In a large skillet or shallow pan heat a little oil over medium high heat. Once shimmering, add in the sliced vegetables and cook, stirring constantly until they begin to brown, about 2-3 minutes. Season with salt and Italian herb seasoning then add in the soy sauce to deglaze the pan. Cook for 1 minutes more then remove the pan from the heat. Serve by piling a spoonful of vegetables over steamed white rice, then top with a couple cubes of salmon and a drizzle of white sauce and enjoy.
