Crush the protein chips in the bag using a large pan or just crushing with your hands. Add to a pie plate or shallow dish and then transfer the chicken cutlets into the chips and press the chips all over the cutlets to create the bread. Lightly spray the cutlets with oil then cook with chicken in an airfryer at 375F for about 12-15 minutes until cooked through and crispy. Remove from the airfryer and set aside to assemble. To the middle of a large tortilla add a handful of shredded lettuce, some diced tomatoes, 1 cutlet, thinly sliced or whole, a light drizzle of buffalo sauce or hot sauce, the optional turkey bacon then roll up just as you would a burrito, tucking in the sides and rolling to seal. Toast in a pan over medium heat, seam side down to seal up the wrap. Cut in half and serve with creamy blue cheese dressing to dip into.
