Cook for about 5 minutes, till the meat just starts to brown then add in the diced jalapeno and onion and continue to cook till everything is browning, about 5 minutes more. Sprinkle on the taco seasoning and stir to combine. Add in half the enchilada sauce to the meat mixture and stir to combine till it’s saucy and smells delicious. Sprinkle in half the cheese, stir to combine then remove from the heat and set aside. Let the meat cool slightly, then begin filling a tortilla with a spoon full of meat filling, rolling it up and placing onto a small tray or baking dish. Repeat with all the tortillas to fill a tray, then top with any remaining meat filling, the second half of the enchilada sauce and the rest of the cheese. Bake for 12-15 minutes in a 400F oven till bubbling, golden and the cheese is melted. Let cool slightly before serving.
