Ingredients

  • 1 lb shrimp

  • 4 Tbsp olive oil
    Salt to taste

  • Cajun seasoning to taste

  • 8 oz spaghetti or linguine pasta 

  • 1 shallot, sliced thin

  • 6 cloves garlic, minced

  • 2-3 Tbsp butter
    2 lemons, zest and juice
    1/2 cup parsley

 

Directions

Step 1

In a large skillet, add 2 Tbsp olive oil over medium-high heat. Add shrimp to the pan, sprinkle with salt, Cajun seasoning and cook until they have turned pink, about 2 to 3 minutes. Remove shrimp and set aside.

Step 2

Cook pasta in salted boiling water for about 6 to 7 minutes until the pasta is al dente. Drain the pasta, reserving ½ cup of the pasta water.

Step 3

To the pan the shrimp was cooked in, add about 1 to 2 Tbsp olive oil on medium high heat and sauté the shallots and garlic until soft, about 2 minutes. Deglaze the pan with 1/2 cup of the reserved pasta water, then add butter, lemon zest, lemon juice, lemon zest and parsley. Lower heat. Stir and allow to simmer for about 1 minute.

Step 4

When the butter has melted, add in the cooked pasta, salt and Cajun seasoning to taste and toss to coat pasta. Return the shrimp to the pan, toss and top with fresh parsley and a bit more lemon juice. Serve hot and enjoy!
