Ingredients

Shrimp:

  • 2 lb shrimp, peeled and deveined

  • 1/4 cup hot sauce

  • 2 eggs, scrambled

  • 2 tsp salt

  • 2 tsp onion 

  • 2 tsp garlic powder

  • 1 tsp chili powder

  • 1 tsp paprika

  • 1 tsp cayenne pepper

  • Vegetable oil for frying

    Dry Batter:

  • 1 cup flour

  • 1/2 cup potato or corn starch

  • 1/2 panko breadcrumbs

  • 1 tsp salt

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1/2 tsp chili powder

  • 1/2 tsp paprika

  • 1/2 tsp cayenne pepper


    Salsa: 

  • 1 mango, diced

  • 1 red bell pepper, diced small

  • 1/2 red onion, diced small

  • 1 jalapeño, diced small

  • 1/2 cup cilantro, chopped fine

  • 1 lime, juiced

  • 1 Tbsp hot honey
    Salt to taste

    Chipotle Mayo:

  • 1 cup mayo

  • 3 chopped chipotle peppers in adobo

 

Directions

Step 1

In a large mixing bowl stir together the shrimp, hot sauce, eggs, salt, onion powder, garlic powder, paprika and cayenne. Make dry batter in a large mixing bowl by combining flour, starch, breadcrumbs, salt, onion powder, garlic powder, chili powder, paprika and cayenne pepper. Add seasoned shrimp into dry batter. Toss to fully coat.

Step 2

Preheat oil to 375 degrees. Deep fry shrimp for 1 to 2 minutes. Fry in batches so you don’t overcrowd the oil. Make the salsa in a medium size bowl by combining the mango, red bell pepper, red onion, jalapeño, cup cilantro, lime juice, hot honey and salt.

Step 3

Make chipotle mayo by stirring mayonnaise and chipotle until fully combined.

Step 4

To assemble warm or fry corn tortillas, spread on chipotle mayonnaise, spoon on mango salsa, fried shrimp and enjoy!
