Add in the cubed chicken and toss to evenly coat. Let the chicken marinade for at least 30 minutes or overnight. Make the toum: in a blender combine the garlic cloves and just enough oil to cover the cloves. Blend on high to puree the garlic and oil. Add in the lemon juice and salt then with the blender running stream in the rest of the oil to emulsify the sauce and bring everything together. The toum should be thick and creamy. Set aside until ready to assemble. Heat a large skillet over medium high heat and add enough olive oil to just coat the pan. Add in the chicken in one even layer, working in batches if necessary. Cook the chicken over medium high heat until golden brown, about 6-8 minutes, flipping halfway through to cook the chicken on all sides. To assemble: spread a layer of toum onto a thin pita bread, then add a layer of chicken pieces, a layer of cooked french fries, pickles as desired and roll up the pita. Heat a skillet with a little chili oil, then toast the sandwich in the chili oil to seal up the bread and warm the sandwich through. Serve with extra toum on the side and enjoy.
