Using a potato masher or back of a spoon, mash the beans as they begin to cook until they are softened and broken down. Taste and adjust seasoning. Remove from heat and set aside. In a food processor or mortar and pestle add the garlic cloves, pepper and a pinch of salt. Pulse or grind into a paste-like consistency and set aside. To a large bowl add the lemon juice, olive oil, chopped onion and the warmed, mashed beans. Stir together until fully combined.Spread the mixture onto a plate or shallow bowl and top with chopped tomato, reserved chopped onion, parsley and drizzle with a good quality olive oil.
