PINK SAUCE RIGATONI

Ingredients

  • 12 ounces Rigatoni

  • 2 Tbsp olive oil

  • 1 pound chicken breast, cut into strips, seasoned to your preference

  • 4 cloves garlic, minced

  • 1 Tbsp parsley and basil

  • 2/3 cup heavy cream

  • 1 – 15 ounce  can tomato sauce

  • 2 ounces Parmesan cheese

  • Fresh parsley, chopped for garnish

 

Directions

Step 1

Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Once done, reserve about 1 cup of the pasta water and drain.

Step 2

Heat oil in a large pan. Add chicken, dry seasoning, garlic and parsley (or basil). Cook chicken for about 8 minutes, stirring to cook all sides. Next add cream and tomato sauce, more seasoning to your liking and bring to a boil, should take about 3 to 4 minutes. Add parmesan cheese and stir.

Step 3

Add cooked pasta to sauce, stir to combine. Add more parmesan cheese to your liking and pasta water if your sauce is too thick. Serve hot, garnished with fresh parsley and enjoy!
