NY STRIP STEAK WITH CREAM SAUCE

Ingredients

  • 2 hoagie rolls

  • 10oz Ribeye steak

  • 1-2 Tbsp tallow or oil

  • 1/2 yellow onion, large dice

  • Salt and pepper to taste

    Cheese sauce:

  • 2 cups milk

  • 15 slices American cheese

  • 5 slices sharp cheddar cheese

  • Sazon or preferred seasoning salt, to taste

 

Directions

Step 1

Bring steak to room temperature, pat dry with a paper towel and generously season with salt and pepper.

Step 2

Heat a large cast iron skillet over medium high heat, until smoking hot. Add olive oil and swirl to coat the pan. Place the steak in the hot skillet and cook for 30 seconds undisturbed. Then, sear all sides until the internal temperature has reached 145 degrees for medium-rare, about 8 minutes. Remove from the pan and allow it to rest.

Step 3

Make the sauce while the steak rests: Using the same skillet, the steak was cooked in, melt the butter on medium heat. Next, add shallot, garlic, salt, pepper and capers and cook for about 2 minutes. Then add cream, thyme, more salt and pepper to your taste, Worcestershire sauce, and parmesan cheese. Stir and continue to cook for another 3 minutes. Sauce will thicken.

Step 4

Once the steak is rested and ready to serve, cut against the grain. Pour the hot sauce over sliced steak and enjoy!
