PHILLY CHEESESTEAK

Ingredients

  • 2 hoagie rolls

  • 10oz Ribeye steak

  • 1-2 Tbsp tallow or oil

  • 1/2 yellow onion, large dice

  • Salt and pepper to taste

    Cheese sauce:

  • 2 cups milk

  • 15 slices American cheese

  • 5 slices sharp cheddar cheese

  • Sazon or preferred seasoning salt, to taste

 

Directions

Step 1

Freeze beef for 30 minutes. Once firm, thinly slice across the grain. Set aside until it reaches room temperature.

Step 2

Meanwhile, make cheese whiz: in a medium saucepan over medium high heat combine milk, American cheese and sharp cheddar. Cook, stirring constantly until fully melted and smooth.

Step 3

On a flat top griddle or large saute pan, melt tallow over medium high heat. Place onions on the griddle and season evenly with salt. Cook for about 5 minutes, or until softened. Then move them to the side of the griddle.

Step 4

On the cleared side of the griddle add sliced beef. Cook for 2 minutes undisturbed till caramelized. Then flip the meat and begin to chop up. Adding salt to taste. Fold onions into chopped beef, then add about 1/4 cup cheese sauce and continue to chop to combine everything evenly, shape the beef and cheese mixture into a rectangle to transfer to the bread.

Step 5

Slice hoagie rolls 3/4 of the way through.  Place on top of the meat and allow to steam for about 1 to 2 minutes. Next scoop up meat into the roll. Add more cheese to the top and serve hot!
