LEMON PEPPER TENDERS

Ingredients

  • 1 lb Chicken Tenders

Batter: 

  • 2 cups buttermilk

  • 1/4 cup hot sauce (don’t be soft)

  • 1 Tbsp Cajun seasoning

  • 1 Tbsp lemon pepper seasoning

  • 1 1/2 cups rice flour (or AP flour)

  • 1 1/2 cups potato starch (or cornstarch)

  • 1 Tbsp lemon pepper

  • 1 Tbsp Cajun seasoning

    Sauce:

  • 5 tbsp butter

  • 1 lemon, zest

  • 1/2 lemon, juice

  • Lemon pepper seasoning, to taste

 

Directions

Step 1

In a medium bowl add buttermilk, hot sauce, Cajun seasoning and lemon pepper seasoning. Whisk until fully combined. Add chicken tenders to wet batter. Marinade for 1 hour or overnight.

Step 2

Make dry batter in a medium bowl by adding flour, starch, lemon pepper seasoning and Cajun seasoning. Whisk until fully combined. Remove tenders from the buttermilk mixture, allowing excess to drip. Drop into dry batter. Press into flour to assure it fully sticks. Repeat this process once more to coat all the tenders

Step 3

Fry tenders in oil preheated at 365°F for 5 to 6 minutes. Remove from oil and drain. Fry in batches to avoid overcrowding the oil.

Step 4

Make sauce combining melted butter, lemon zest, lemon juice and lemon pepper seasoning. Whisk until fully combined. Toss fried chicken tenders in the sauce. Serve immediately and enjoy
