Ingredients

  • 2 Tbsp olive oil

  • 1 lb ground beef (80/20)

  • Pepper to taste 

  • 2 celery stalks, chopped

  • 1 carrots, chopped

  • 1 onion, medium chopped

  • 1 tomato, chopped

  • 1 cup beef broth

  • 8 oz Rigatoni pasta

  • ¼ cup Mozzarella cheese, to top 

 

Directions

Step 1

In a large pot, heat olive oil over medium high heat. Add the ground beef, breaking up with a spatula or large spoon so it crumbles into small chunks, cook for 5 to 6 minutes till the meat begins to brown. Add garlic, celery, carrots, onion and tomato. Cook until the vegetables are soft, another 3 to 4 minutes.

Step 2

Bring a large pot of salted water to a boil. Add pasta, cook uncovered, stirring occasionally to al dente, about 12 minutes. Drain, and reserve ¼ cup of water to thin out the sauce if necessary.

Step 3

Carefully remove the hot baking sheet from the oven, place the seasoned potatoes on the baking sheet in a single layer. Bake for a total of 1 hour, tossing them every 10 to 15 minutes.

Step 4

While the potatoes are roasting, prepare dipping sauce by combining mayonnaise and chili garlic sauce (or sriracha).

Step 5

Add pasta to meat and vegetable mixture and stir until combined. Serve hot and top with cheese.
