MEATBALL SUB SANDWICH

Ingredients

Meatballs:

  • 2 pounds ground beef (85/15) 

  • 2 Tbsp fresh parsley, chopped

  • 1 cup bread crumbs 

  • 2 eggs 

  • 1 cup Parmesan cheese 

  • 2 tsp Cajun seasoning 

  • 2 Tbsp olive oil

Sauce: 

  • 2 Tbsp olive oil 

  • 1 medium onion, small chopped

  • 6-8 cloves garlic, minced 

  • 30 oz tomato sauce 

  • Pinch of salt to taste 

  • 4 large hoagie rolls or baguettes 

Garlic butter: 

  • 2 Tbsp butter 

  • 4 cloves garlic, minced 

To serve:

  • 1 bunch, fresh parsley, chopped 

  • parmesan cheese (freshly grated) to taste

  • Shredded mozzarella cheese to taste

 

Directions

Step 1

Place ground beef in a large mixing bowl with parsley, bread crumbs, eggs, cheese, and Cajun seasoning. Mix well until ingredients are fully combined. Divide meat mixture into 12 equal parts, then roll each part into 12 meat balls.

Step 2

Pour olive oil into a large pan on medium high heat. Cook formed meat balls on all sides for a total of about 15 minutes. In a separate pan on medium high heat, add more olive oil, onion, tomato sauce and salt. Stir and simmer for at least 10 to 15 minutes. Next, pour the sauce over the meatballs (still in the pan they were cooked in). Let them simmer on low for another 4 to 5 minutes.

Step 3

Heat a medium saucepan over medium heat. Add garlic and butter and cook for about 2 to 3 minutes. Immediately brush the garlic infused butter onto the sub rolls, drizzle on parmesan cheese and parsley.

Step 4

To assemble subs, place 6 meatballs per sub sandwich. Don’t fully cut the bread in half, so that the meatballs can be held. Spoon on some of the sauce, sprinkle on mozzarella cheese and place subs under a broiler to melt cheese. Remove subs, top with more parmesan, serve and enjoy!
