MCDONALD’S SNACK WRAP
Ingredients
1 1/2 lb chicken breast tenders
Wet batter:
1 cup Buttermilk
2 tsp seasoning blend of your choice, such as cajun
Dry batter:
1 cup Potato starch
2 tsp seasoning blend of your choice, such as cajun
To serve:
vegetable oil for frying
Tortillas
Mayonnaise
Iceberg lettuce, shredded
Tomatoes, small diced
Finely shredded cheese blend
Directions
Step 1
In a medium size mixing bowl add the buttermilk, seasoning of choice and whisk together. Set aside. In a medium size bowl, add baking powder, paprika, garlic powder, salt, and black pepper. Whisk and set alongside the buttermilk mixture.
Step 2
Dip each chicken tender in the wet batter, then into the dry mixture. Heat oil, about 2 inches high, to 350 degrees in a deep pan. Fry tenders, making sure not to overcrowd them. Fry until golden brown, about 6 to 8 minutes. Transfer to a rack to drain any excess oil.
Chef tip: as soon as the chicken tenders come out of the fryer, sprinkle with more seasoning of choice.
Step 3
To assemble the wrap, warm or slightly toast a tortilla, add mayonnaise, lettuce, tomatoes, then the fried chicken tender. Top with shredded cheese. Roll up and enjoy!
Chef Tip: Alternatively, you can sprinkle cheese in a pan over medium high heat. Immediately, before melted, add a tortilla right on top of the cheese. Allow the cheese to melt onto the tortilla (thank me later). Then continue to build the wrap with the mayo, lettuce, tomatoes, add some pickled peppers, and top with seasoned fried chicken tender.
