LOADED FRIES YOUR WAY
Ingredients
Fries:
5 Potatoes (russet or Idaho work best)
Vegetable oil for frying
Salt
Suggested toppings:
Sautéed onion and peppers
Pickled jalapenos
Cilantro
Green onion
Salsa
Suggested Proteins:
Hanger steak
Chicken
Shrimp
Chili (beef, turkey or bean/vegetarian)
Suggested Dairy:
Cheddar
Mozzarella
Feta
Sour Cream
Suggested seasonings:
Cajun seasoning
Lemon Pepper
Italian Blend
French fry seasoning blend
Directions
Step 1
First wash and peel the potatoes. You can keep the skin on, but I personally prefer them with no skin. Cut the potatoes lengthways to your preferred thickness. I cut them to about 1/2 inch. Place them in a bowl of ice water to rinse off the starch. Dry the potatoes on some absorbent paper towels.
Step 2
Heat the oil to 315 degrees. It is easier to use a deep fryer with a basket. Fry all the potatoes in batches (so you don’t overcrowd the fryer) for about 5-7 minutes. Then remove the basket from oil and pour potatoes onto a rack. They won’t be brown and will be a little flimsy. Reheat the oil to 375 degrees and re-fry the potatoes for another 5 minutes. Take the French fries out, shake excess oil off, pour into a large bowl and lightly salt.
Step 3
There are no “Rules” to this recipe, but if there were any, I’d say: SEASON YOUR TOPPINGS! Now with that said, let’s load ‘em up!
While the fries are still hot, simply pile on the toppings of your choice. I like to save the cheese or cheese sauce for drizzling right on top, along with any pickled or fresh vegetables or herbs. Serving this family style and letting everyone dig in is also a great idea for a gathering!
