LAMB BURGER
Ingredients
Burger patties:
1 lb ground lamb (80/20)
1/2 white onion, grated and juiced
3 cloves garlic, grated
1/4 cup parsley, finely chopped
salt to taste
1 tsp black pepper
1/2 tsp allspice
1 tsp dried oregano
Sauce:8 oz feta cheese
1 cup yogurt
2 roasted red peppers
4-5 mint leaves
1 lemon, zested
1/4 cup olive oil
To serve:Burger Buns
Arugula dressed with balsamic vinegar
Pickled red onion
Directions
Step 1
Combine the lamb, onion, garlic, parsley, salt, pepper, all space and oregano in a large bowl and, using your clean (or gloved) hands, mix until just combined. Split the meat into 4 equal portions and shape each piece into a circular patty that is 1/2-inch-thick. Set aside to rest.
Step 2
Into a food processor add feta cheese, yogurt, red peppers, mint leaves, lemon zest and olive oil. Pulse until fully combined and smooth. Set aside and refrigerate until serving.
Step 3
Preheat a large pan on medium high heat. Once hot, place patties in the pan and cook to your desired doneness. Internal temperature should reach at least 160 degrees. For medium rare burgers, cook lamb patties for 4 minutes per side. For medium well, cook lamb patties 6 minutes per side.
Step 4
To serve, toast burger bun, spoon on a generous amount of the burger spread, add arugula, and pickled onion. Enjoy!
