To that bowl, pour in 1 cup of cold water. Whisk together until smooth. There should be no lumps. Add more water if necessary, to make a pancake-like consistency, not too thick. Set both bowls (dry and wet batter) side by side for the dreading process.To dread the chicken drums, dip the chicken pieces into the bowl of dry mixture, roll the chicken around a bit to complete the coat, then take them out and dip them into the wet batter. Drip off the excess wet batter, next dip the chicken back into the dry mixture.In a pot (or fryer) add a generous amount of oil and heat it until the oil temperature reaches 300 degrees. Fry chicken drums in batches so you don’t overcrowd the oil. Add the battered chicken carefully and fry them until they cook for 8 to 10 minutes. They will not be completely done. Take them out to drain. Repeat the process until all the drums are fried once. After all the pieces are fried, raise the oil’s heat to 375 degrees. Refry all of the chicken pieces for another 1 to 3 minutes.To make sauce, place a separate saucepan over low medium heat and add soy sauce, brown sugar, cup water, gochujang and sesame oil. Stir well. Once it starts bubbling, let cook 2-3 minutes to thicken slightly and remove the pan from the heat.Brush sauce over the chicken or toss to completely coat.
