Ingredients

• 2 tsp Coarse kosher salt
• black flaky salt to taste for finish
• 2-3 lbs beef tenderloin cleaned and trimmed (or several 4 ounce filet mignon steaks)
• 1/2 cup (8 Tablespoons) Ghee

Instructions

1. Preheat a grill on high.
2. Season the tenderloin with a generous amount of salt on both sides.
3. Place filet on the grill and sear thoroughly on all sides till a good crust forms. Remove from the grill to rest. Cut the tenderloin into 1-2 inch thick steaks
4. Melt ghee in a pan till it is very hot but not smoking. Into a separate pan on high heat, pour about 2 Tablespoons of the ghee, enough to cover the bottom, then place steaks on the pan. Once all the steaks are in the hot pan, pour the melted ghee over the steaks. Allow steaks to baste in the melted ghee. Flip after about 30 seconds.
