HOT HONEY FRIED CHICKEN SANDWICH
Ingredients
Chicken:
3 cups buttermilk
2 lb chicken thighs
1/4 cup hot sauce
1 Tbsp paprika
1 Tbsp chili powder
1 Tbsp garlic powder
2 tsp thyme
1 tsp oregano
1 Tbsp salt
Dry Batter:2 cups rice flour
2 cups potato starch
1 Tbsp paprika
1 Tbsp chili powder
1 Tbsp garlic powder
2 tsp thyme
1 tsp oregano
1 Tbsp salt
Hot Honey Sauce:
1/3 cup honey
2 Tbsp hot sauce
1-2 Tbsp cayenne pepper
To assemble:
Brioche buns
Mayonnaise
Slaw
Pickles
Tomatoes
Directions
Step 1
In a large mixing bowl whisk together the buttermilk, hot sauce, paprika, chili powder, garlic powder, thyme, oregano and salt. Submerge the chicken tenders and marinade for at least 4 hours, and up to 24 hours.
Step 2
Prepare the dry mixture in a large bowl: combine the starch, flour, paprika, chili powder, garlic powder, thyme, oregano and salt.
Step 3
Dredge the chicken tenders by lightly coating with the dry mixture. Place on a wire rack. Allow to rest and dry out for 10 minutes. This will help to make them nice and crispy. After they’re dried out for 10 minutes, dip them again in the wet mixture, then again in the dry batter.
Step 4
Deep fry chicken in preheated, 315°F oil for 5 to 6 minutes. Remove chicken and drain on a wire rack. The chicken will be pale but this is just the initial fry. Bring oil temperature up to 375°F and fry again for another 1 minute
Step 5
In a medium size saucepan, whisk together the honey, hot sauce and cayenne pepper. Cook over very low heat and allow sauce to come to a light simmer, 3 to 5 minutes. Then, brush onto the fried chicken. To assemble the sandwich, spread mayonnaise on the bottom bun, place pickles, sauced chicken and top bun. Enjoy!
