FILIPINO CHICKEN ADOBO

Ingredients

  • 2 lb chicken drumsticks

  • 1 cup soy sauce

  • 1/2 cup white vinegar

  • 1/4 cup brown sugar

  • 8 cloves garlic

  • 1-2 Tbsp olive oil

  • 1 medium white onion, sliced

  • 1 cup chicken stock or water

  • 4-6 bay leaves

  • 1 Tbsp black peppercorns

 

Directions

Step 1

Combine soy sauce, vinegar, brown sugar and garlic in a large bowl. Mix well, then add chicken.  Marinate the chicken for at least 1 hour and up to 8 hours.

Step 2

Preheat olive oil in a large pan over medium high heat. Remove the chicken from the marinade (reserve marinade for later) and sear for 2 minutes per side, or until browned.  Then, remove chicken and set aside.

Step 3

In the same pan the chicken was cooked in, add onion and cook for about 5 minutes, until softened. Transfer chicken back into the pan, along with the reserved marinade, stock, bay leaves and peppercorns.  Cook until it comes to a boil, about 4 to 5 minutes. Lower heat to low, cover pan and simmer for 30 minutes.

Step 4

Remove the lid and continue to cook, reducing liquid, for about another 10 minutes. Serve over cooked rice and Enjoy!
