HEALTHY MEATBALL SUB SANDWICH
Ingredients
Meatballs:
1 lb ground beef (96/4)
1-2 cloves garlic
1 egg
2 oz parsley, finely chopped
1/4 cup Italian breadcrumbs
Salt to taste
Pepper to taste
Sauce:
1/2 white onion
1-2 cloves garlic
15 oz tomato sauce
Salt to taste
Basil to taste
To serve:Hoagie roll or bread of choice
Thin sliced cheese
Directions
Step 1
Place ground beef, garlic, egg, parsley, breadcrumbs, salt and pepper in a large mixing bowl. Mix well with gloved hands or a wooden spoon until ingredients are fully combined. Divide meat mixture into 2 oz meatballs (you should have 6).
Step 2
Air fry meatballs for 9 minutes at 400°F. You can also bake them on an oiled sheet tray for about 10-12 minutes in a 400F oven.
Step 3
While the meatballs cook, add olive oil to a large saute pan on medium high heat. Add onion, garlic and salt. Cook for 5 to 7 minutes, stirring often, until onions have softened. Reduce heat to medium low, pour in tomato sauce, add basil and simmer for at least 10 to 15 minutes, stirring occasionally.
Step 4
Transfer cooked meatballs into the sauce, coating the meatballs with sauce. Let them simmer on low for another 4 to 5 minutes. To assemble subs, place 3 meatballs per sub sandwich. Spoon on some of the sauce, top with cheese and place subs under a broiler to melt. Carefully remove subs, serve and enjoy!
