HOMEMADE SALSA

Ingredients

  • 4 Roma tomatoes

  • 2 tsp olive oil

  • Salt and Pepper to taste

  • 1-2 jalapeños

  • 4-6 cloves garlic

  • Salt to taste

  • 1/2 lime, juice

  • 1/2 white onion, chopped

  • 1/4 cup cilantro, chopped

 

Directions

Step 1

Score a small “x” on the bottom of each tomato with a sharp knife. Lay tomatoes, jalapeño and garlic in a single layer and drizzle with olive oil and salt. Allow to cook for about 6-7 minutes, flipping halfway. Tomatoes will be tender and charred. Once roasted, carefully peel off charred tomato skin.

Step 2

Muddle jalapeños and garlic in a molcajete or a stone mortar and pestle. Then add tomatoes and continue to muddle. Next add salt, lime juice, onion and cilantro.

Step 3

Enjoy with tortilla chips, tacos, over eggs, baked potato, salad, or pretty much anything as a fresh and delicious condiment!
