HEALTHY SPAGHETTI
Ingredients
1 lb spaghetti or pasta of choice
1 lb low fat ground beef
1 onion
1 bell pepper
1-2 jalapeños
1 large carrot
4 cloves garlic
1 Tbsp Cajun seasoning
Salt to taste
30 oz canned tomato sauce
Directions
Step 1
In a food processor add bell pepper, onion, jalapenos, carrot and garlic. Blend until ingredients are roughly chopped.
Step 2
Cook spaghetti to al dente according to package instructions. Drain and set aside.
Step 3
Meanwhile, into a large pan add olive oil on medium high heat. Transfer chopped vegetable mixture from the food processor into the pan. Add salt and stir.
Step 4
Cook for about 5 minutes. Then add ground beef to the pan, along with Cajun seasoning and salt. Continue to stir and crumble meat until fully cooked, about 10 minutes. Next, add tomato sauce and simmer for 3 to 5 minutes. Add cooked pasta and toss until fully coated. Serve hot, or refrigerate for up to 5 days.
