HEALTHY BEEF TACOS Oct 4 Written By Eleanor Debel PrintHEALTHY BEEF TACOSYield 2Prep time10 MinCook time10 MinTotal time20 MinIngredientsLow Fat Taco Meat1 lb 96/4 ground lean beef 3 Tbsp taco seasoning ¼ cup water To Assemble:6 taco sized zero calorie corn tortillas 1 large tomato, finely diced 1 cup iceberg lettuce, shredded Hot sauce to taste InstructionsHeat a large nonstick pan over medium high heat and add all the beef. When it begins to sizzle, break the meat up with a wooden spoon or spatula into chunks. Continue to cook for about 5 minutes until the meat releases juices and starts to brown. Sprinkle in the taco seasoning and stir to combine everything. Cook for 1-2 more minutes to incorporate the taco seasoning then add all the water and stir. Cook for another 2-3 minutes until the water reduces by half and you have saucy, delicious browned beef. Remove the pan for the heat and set aside to build your tacos. If desired, warm the tortillas over the flame of your stove or in a pan. Pile the beef into aprox 6 tacos, then top with shredded lettuce, tomatoes and hot sauce.
