CHICKEN PHILLY 'CHEESE STEAK’ SANDWICH Oct 4 Written By Eleanor Debel PrintCHICKEN PHILLY 'CHEESE STEAK’ SANDWICHYield 2Prep time10 MinCook time15 MinTotal time25 MinIngredientsChicken1 lb boneless skinless chicken thighs, thinly sliced ½ tsp salt ½ tsp pepper ½ tsp garlic powder ¼ tsp cayenne¼ tsp smoked paprika 2 Tbsp Kinders fire roasted jalapeno sauce 1 large red bell pepper, stem, seeds and ribs removed and thinly sliced 1 yellow onion, peeled and thinly sliced 1 tbsp olive oil Salt and pepper to taste Chipotle Mayo¼ cup mayonnaise 2 Tbsp chipotle in adobo sauce 2 large hoagie rolls 4 slices pepper jack cheese2 Tbsp banana peppers, sliced InstructionsPreheat oven to 400FIn a large mixing bowl toss the sliced chicken thighs with the salt, pepper, garlic powder, cayenne and paprika until fully coated. Drizzle on the jalapeno sauce and toss once more to evenly marinate the chicken pieces. Let sit while you prepare the rest of the ingredients. Heat a large nonstick pan with the olive oil over medium heat. Once hot, add the peppers and onions, season with a pinch of salt and pepper and let cook, tossing occasionally until tender and lightly browned, about 8-10 minutes. Remove the peppers and onions from the pan and set aside. In a small bowl stir together the mayonnaise and chipotle sauce until combined. Set aside. Return the same pan you cooked the peppers in to the heat and set over medium high. Add a drizzle of oil and then the marinated chicken. Cook, stirring occasionally until fully cooked, about 6-8 minutes depending on the size of the pieces. Add the peppers and onions back into the pan and then lay the slices of cheese over top. Let the cheese melt over the chicken and peppers, about 5 minutes. Slice the hoagie rolls in half lengthwise and toast in the oven until hot and crispy. Spread the chipotle mayo over the rolls, add a layer of banana peppers then add a heaping pile of the cheesy chicken and pepper mixture. Serve immediately and enjoy.
