HOMEMADE BEEF CHORIZO Mar 25 Written By Eleanor Debel https://www.youtube.com/shorts/toJ68PT3xJ8 PrintHOMEMADE BEEF CHORIZO Yield 4-6Prep time15 MinTotal time15 Min Ingredients 2 dried Ancho peppers, stemmed and de-seeded2 Guajillo peppers, stemmed and de-seeded 4 garlic cloves, peeled ¼ cup white vinegar 1 dried bay leaf 1 tsp black pepper 1 Tbsp ground cumin 1 tbsp dried oregano 2 Tbsp paprika 2 Tbsp chipotle chili powder 2 lbs 80/20 ground beef 2 tsp kosher salt InstructionsPut the dried chilis in a bowl and cover with boiling water then set aside for 15 minutes to soak and rehydrate. After 15 minutes drain off all the water and set aside. To a blender add the peeled garlic cloves, white vinegar, bay leaf, black pepper, cumin, oregano, paprika, chipotle chili powder and the soaked chilis. Blend until you have a nice smooth paste. Place the ground beef in a large bowl and add the chili puree and salt. Mix the meat and seasoning until fully incorporated together. This is now ready for whatever recipe you like, you can also keep the seasoned beef in your freezer for later use. Try this meat on a quesadilla or in my queso fondido recipe!
