CHILI HONEY CHICKEN TENDERS Mar 24 Written By Eleanor Debel https://www.youtube.com/shorts/MREgX1jlys8 PrintCHILI HONEY CHICKEN TENDERS Yield 2-4Prep time15 MinCook time10 MinTotal time25 Min Ingredients Chicken: 1 lbs chicken tenders 1 ½ cups flour ¾ cup potato starch or cornstarch 1 Tbsp baking powder 2 Tbsp seasoning salt or favorite all purpose spice blend 1/2 cup sparkling water Sweet Chili Honey Sauce: 3 Tbsp butter ⅓ cup thai sweet chili sauce ⅓ cup hot sauce of choice 1 tsp chipotle chili powder 3 Tbsp honey 1 tsp lemon juice (about ¼ lemon) InstructionsPreheat a fryer or dutch oven filled with oil to 350 F. Prepare a sheet tray lined with paper towels or a wire rack. In a large bowl whisk together the flour, starch, baking powder and seasoning mixture until fully combined. Transfer half of this mixture to another large bowl and set them both aside while you make the sauce. In a small pot set over medium high heat add the butter and let it melt. Once melted add in the thai sweet chili sauce, hot sauce and chipotle chili powder and whisk to combine. Bring to a light simmer then reduce the heat to medium low and add in the honey. Stir until the sauce comes together then stir in the lemon juice, remove from the heat and set aside covered so it stays slightly warm. Add the sparkling water to one of the bowls of dry batter and whisk until fully combined and you have a smooth wet batter similar to a pancake batter consistency. Drop all the chicken tenders into the dry batter bowl and toss to coat. Then, working in batches, drop the tenders into your wet batter, coating them completely, then back into the dry for the final coating. Be sure to press the dry batter into the tenders so it fully sticks. Fry the tenders in the preheated for 5-7 minutes until golden and crispy, season with a little salt right when they come out of the fryer, then immediately drench them in the sweet chili sauce and enjoy.
