Remove about ⅓ cup of the cooked chorizo and set aside. Turn the heat off the pan and sprinkle the whole bottom of the pan with the shredded cheese, then top with the large slices of oaxaca cheese. Place the pan in the preheated oven and cook until the cheese is all melted and the edges are bubbling, about 10-15 minutes.
