Make the cuts approximately 1/8 inch deep and 1/2 to 1 inch apart. Place scored chicken in a large mixing bowl. Set aside. To make the seasoning blend, combine all the dried spices in a small bowl. Set aside.Place 4 chipotle chilis in their adobo sauce in a food processor (careful not to touch your eyes, or wear kitchen gloves). Blend until smooth, then pour over chicken and give the drumsticks a massage. Drizzle in the honey, then sprinkle in the seasoning blend. Fully coat the chicken, cover and marinate for 1- 2 hours, allowing all the flavor to penetrate inside the scored chicken.Preheat the air fryer to 375 degrees. Place chicken in the fryer basket, making sure not to crowd. Air fry chicken legs for 30-40 minutes and flip them every 10 minutes. Transfer to a plate and let rest.While the chicken cooks, prepare the salsa by combining the Hungarian wax pepper, sweet pepper, Serrano, shallot, Roma tomato, Persian cucumber, cilantro white vinegar, salt and olive oil. Stir until fully combined. Add salt to taste.To make the chipotle mayo, add mayo and chipotle chilis into a small bowl and whisk to combine.
