Using wet hands, form 10-12 skewers of the meat by grabbing roughly ⅓ cup of the meat mixture and pressing the ball onto the skewer to create a long flat patty attached to the skewer. Repeat with all the meat and set aside.In a bowl stir together all the ingredients for the yogurt sauce, taste for seasoning and set aside in the fridge till assembling.Preheat a grill pan over high heat. While it heats, toss together the onions and sumac.Grill the kebabs over high heat till cooked through, about 3-4 minutes per side. To assemble the sandwich, lay out the pita and spread a couple tablespoons of yogurt sauce over the middle. Add in 2-3 kebabs, sliding the meat off the skewer gently, then a sprinkle of sumac onion and a handful of shoestring fries.
