While the oil heats make the sauce: in a large saucepan melt the butter and add the ginger paste, hot sauce and soy sauce. Bring to a simmer then add in the sugar and stir till the sauce thickens slightly.Fry the chicken wings till the internal temperature reaches 165F, about 8-10 minutes. Let drain and then toss with the sauce.
