STUFFED CHICKEN
Ingredients
2 chicken breasts
1-2 tsp of Cajun seasoning
Filling:
1/2-2/3 cup cream cheese
1-2 tsp of Cajun seasoning
3 cloves garlic, minced
1 chili of choice, finely chopped
1/4 cup parsley, roughly chopped
1 Tbsp honey
Directions
Step 1
Preheat the oven to 400. Line a baking sheet with parchment paper and set aside. Using a sharp knife, slice a pocket into both chicken breasts, cutting almost all the way through, but be sure not to cut through the bottom.
Step 2
Make filling by combining cream cheese, Cajun seasoning, garlic, chili, parsley and honey. Spoon mixture into chicken pockets.
Step 3
In a large skillet, add the oil and bring to medium-high heat. Fry the stuffed chicken breasts for about 2 minutes, flip the breasts, then transfer the pan to the preheated oven and bake for 20 minutes, or until chicken reaches an internal temperature of 165 degrees.

Serve with salad or your side or choice and enjoy!
