In a large bowl combine the chicken thighs, buttermilk, hot sauce and 2 tsp of the spice blend. Stir everything together to coat the chicken thoroughly then set aside for at least 15 minutes or up to 24 hours in the fridge.Make the maple bbq sauce: In a pan or pot combine the ketchup, worcestershire sauce, apple cider vinegar, hot sauce, maple syrup and spice blend. Set over medium heat, stirring occasionally until the sauce is bubbling. Remove from heat and set aside.Prepare a large pot of oil for frying, set over medium high heat and heat to 375 F. While the oil heats, whisk together the flour, potato starch, baking powder and spice blend. Remove the chicken from the buttermilk, shaking off excess liquid, then dredge in the dry mixture, pressing in the coating onto the chicken.Fry at 360 F until the chicken is golden brown and crispy, about 7-10 minutes. Remove to a wire rack or paper towel lined tray and let cool slightly. Generously brush the chicken with the maple bbq sauce on both sides.
