Air Fry the chicken thighs at 400F for about 10-12 minutes until they are cooked through. Let rest for 5 minutes to cool then dice into small chunks and add to a bowl.Make the buffalo sauce: to a large saute pan add the butter and melt over medium high heat. Pour in the hot sauce and hot honey and bring to a simmer. Remove from the heat then pour over the chicken and stir to combine. Add in the chopped cilantro and half the shredded mozzarella to the chicken and stir to evenly combine.Slice the whole pack of rolls in half lengthwise and set onto a sheet tray. Spread the chicken mixture all over the bottom rolls, then sprinkle on the blue cheese and remaining mozzarella cheese evenly dispersed. Place the top of the rolls over the chicken and cheese and brush the tops with olive oil, flavored oil or melted butter.Bake at 375F for 8-10 minutes, until the rolls are heated through and the cheese is melted and delicious.
