Ingredients

• 1-2 lb beef chuck steak

Seasoning blend:

• 1 tsp salt
• 1 tsp black pepper
• ½ tsp garlic powder
• ½ tsp paprika
• ¼ tsp cayenne pepper
• ¼ tsp dried thyme

Beef jus:

• 1 white onion, cut into chunks
• 3 cloves garlic, peeled
• 2 sprigs rosemary
• 3 sprigs of thyme
• Handful of parsley with stems
• 2 cups beef stock

For the sandwich:

• 1 yellow onion, thinly sliced
• 1 baguette
• 4-6 slices cheddar or swiss cheese
• ¼ cup mayonnaise
• 1 Tbsp stone ground mustard
• 1 tsp worcestershire sauce
• 1 Tbsp ground horseradish

Instructions

1. In a small bowl combine all spices. Lightly spray the steak with oil so the spices will stick. Season the beef steak all over with the spice blend and set aside.
2. Cook the beef: Heat a large, high sided pan or dutch oven over high heat, add a little oil to the pan and sear the steak on both sides for 4-5 minutes till deeply browned. Add the onion, garlic, and beef stock to the pan with the steak. Bring the liquid to a boil and add in the rosemary, thyme and parsley. Cover the pot and cook on low heat or in a 350F oven for 2 hours, until the beef shreds apart with a fork.
3. While the beef cooks, stir together the mayonnaise, mustard, worcestershire and horseradish. Set aside in the fridge until ready to assemble the sandwich. Add the thinly sliced onion to a pan with a little oil and a sprinkle of salt. Cook on medium low, stirring occasionally, until golden and caramelized, about 20 minutes.
4. Remove the beef to a separate dish and flake it apart. Strain the cooking liquid and discard the solids. Reserve the liquid to dip the sandwich into.
5. To assemble the sandwich: slice the baguette lengthwise and slather on a good amount of sauce onto both sides of the baguette. Place the slices of cheese on both sides, then broil on high until the cheese is melted and bubbling. Top with a heaping pile of beef and caramelized onions. Serve with beef jus to dip into.
