GARLIC STEAK BITES

Ingredients

• 2 filet mignon steak, cut into 1 inch cubes
• 1 tsp Worcestershire sauce
• 1 Tbsp olive oil
• 1 tsp Dijon mustard
• 1-2 tsp Traeger beef rub or seasoning salt

Garlic Butter Sauce:

• 1 large sprig of fresh rosemary, leaves removed and finely chopped
• 6 cloves garlic
• 1 stick butter
• 1 tsp Beef rub or seasoning salt

Instructions

1. Preheat a charcoal grill with a full chimney of coals.
2. In a large bowl toss the cubed steak with the worcestershire sauce, olive oil, mustard and seasoning. Skewer the cubes on long metal skewers and set aside.
3. While the coals preheat, make the garlic butter sauce. Add the garlic and chopped rosemary to a mortar and pestle and grind into a paste. Melt the butter in a large saute pan, then add the garlic and rosemary paste and cook until fragrant but not browned. Remove from the heat and pour into a heat proof bowl.
4. When the coals are ready, place the skewers on the heat and cook for 3-4 minutes, then flip and begin basting the butter sauce on the meat with a brush. Cook for another 3-4 minutes, flipping then basting, then remove from the heat.
5. Serve with more garlic butter sauce over top and enjoy.
