Ingredients

  • 1 pound Shrimp, shelled, deveined, tail on

  • 1 teaspoon paprika
    Salt to taste
    Batter:

  • 1 cup Flour

  • 1/2 cup starch

  • 1 tsp baking soda

  • 2 tsp paprika

  • Salt to taste

  • 1/2-3/4 cup cold carbonated water

  • Vegetable oil for frying such as peanut oil or canola

Directions

Step 1

First prep the shrimp by gently making 4 to 5 shallow slices on the back of each shrimp. This will straighten the shrimp, preventing them from curling as they fry. Sprinkle shrimp with paprika and salt.

Step 2

In a mixing bowl add flour, starch, baking soda, paprika salt, carbonated water and whisk until fully combined. Toss shrimp in batter.

Step 3

Heat about 2 inches of oil in a pan to about 350 to 360 degrees. Gently dip each shrimp in oil. Fry shrimp 2 to 3 minutes in batches so the oil doesn’t overcrowd. Serve immedietly and enjoy!
