Ingredients

Marinaded Chicken:

• 2 lb chicken thighs
• 3/4 cup plain yogurt
• 1 lemon, zest and juice
• 1/4 cup vinegar
• 1/4 cup ketchup or tomato paste
• 5 cloves garlic, minced

Spice blend:

• 1 packet Sazon or seasoning salt (or 2 tsp salt)
• 1 tsp oregano
• 1 tsp turmeric
• 1 tsp cayenne pepper
• 2 tsp paprika
• 1/2 tsp cinnamon & cumin

Special Sauce:

• 1/2 cup mayonnaise
• 1 cup sour cream
• 1/4 cup ketchup
• 2 tsp relish
• 1 Tbsp Worcestershire
• 1 Tbsp white vinegar
• 1 tsp Cajun

To Assemble:

• 2 cups shredded cabbage
• 1/4 cup mayo
• Potato crisps or fries (optional)
• Pita bread

Instructions

Directions:

1. Make marinade in a medium mixing bowl by combining yogurt, lemon zest, lemon juice, vinegar, ketchup (or tomato paste) and garlic. Whisk until fully mixed.
2. Add chicken into the marinade. Toss until fully coated, cover and refrigerate to marinade. 8 hours is suggested.
3. Thread the chicken on skewers. Bake on a rack-lined baking sheet for 15 minutes, then flip each skewer and return to the over to bake for another 10 to 15 minutes. You can also grill outdoors on medium heat for 5 to 8 minutes per side
4. To make slaw, in a medium bowl combine cabbage, mayonnaise, vinegar and seasoning of your choice. Toss until cabbage is fully coated.
5. To make the special sauce, combine mayonnaise, sour cream, ketchup, relish, Worcestershire, vinegar and Cajun seasoning in a small bowl. Whisk together until fully mixed.
6. Make potato crisps by thinly slicing a potato using a mandolin. Place them in a bowl of ice water for 30 seconds. Dry them with a paper towel, then fry them over medium high heat (about 225 to 250 degrees) in canola or vegetable oil for about 5 minutes.
7. To assemble, place pita bread on a flat surface, spread slaw across the middle of the pita, portion out chicken and place on top of the bed of slaw, spoon desired amount of the special sauce, top with potato crisps, fold over both sides and enjoy every bite!
