RED CURRY RAMEN Feb 2 Written By Eleanor Debel https://www.youtube.com/shorts/I-x1NnvfNxYPrintRED CURRY RAMEN Yield 1Prep time5 MinCook time10 MinTotal time15 Min Ingredients 1 Tbsp red curry paste 1 cup coconut milk 1 cup chicken stock ½ tsp fish sauce 4-6 fully cooked and thawed frozen dumplings of choice 1 package instant ramen (I used buldok spicy) ½ lime, juiced InstructionsIn a saute pan or pot add the red curry paste and set over medium high heat. Toast slightly for a couple minutes, then add in the coconut milk and chicken stock and whisk to incorporate the curry paste into the liquid. Increase the heat and bring to a simmer. Add the fish sauce and taste for seasoning. Once simmering, add the dried ramen noodles and cook, stirring occasionally, for 5-6 minutes or according to package instructions. If desired, add the sauce packet and stir to combine. Add the thawed and cooked dumplings to the pot and let heat in the broth for 2-3 minutes on low heat. Drizzle in the lime juice and stir everything together. Transfer to a serving bowl and enjoy!
