MINT LEMONADE Mar 17 Written By Eleanor Debel PrintMINT LEMONADE Yield 1-2Prep time10 MinTotal time10 Min Ingredients ½ cup white sugar ½ cup water 1 large lemon or two small ¼ cup fresh mint leaves Fresh mint leaves to serve Lime slices Ice Cold water InstructionsAdd the sugar and water to a small pot and bring to a boil just to melt the sugar and make your syrup, about 5 minutes. Remove from heat and pour into a heat proof vessel, keep in the fridge until ready to make your drink. Peel your lemon, removing as much white pith and peel as you can. Slice the lemon in half and scoop out all the seeds you can find. Cut the lemon into small pieces and add to a blender with the fresh mint leaves and cooled sugar syrup. Blend on high until everything is mixed and cohesive. This is the drink’s concentrate, so to serve add a couple mint leaves to a glass, lightly press with a muddler or wooden spoon then add about half the glass full of the lemonade concentrate and top with ice and cold water to dilute to your taste.
