Stir to combine everything and then add the steak to the bowl and cover it in the marinade so it's fully coated. Let sit for at least 30 minutes and up to several hours. Heat a grill or grill pan on high until nearly smoking. Remove the steak from the marinade and grill for about 5-7 minutes per side depending on how thick the steaks are. For medium rare cook to 135 F for medium 140 F and well done 160 F. Check with a meat thermometer for the preferred cook. Remove the steaks from the grill and let rest for 10 minutes before slicing. Make sure you slice the steak against the grain of the meat for optimal tenderness. Add the sliced steak to a pan and cover with shredded cheese. Broil on high for 2-3 minutes to get the cheese melted and bubbly. Serve immediately with your favorite salsa and warm tortillas.
