BACON JAM CHEESEBURGER Oct 7 Written By Eleanor Debel https://www.youtube.com/shorts/KXsbvM8exSIPrintBACON JAM CHEESE BURGERYield 1Prep time10 MinCook time20 MinTotal time30 MinIngredientsBacon Jam12 oz beef bacon, diced 1 large onion, finely diced ½ tsp kosher salt ½ tsp black pepper½ tsp onion powder 2 Tbsp worcestershire sauce¼ cup brown sugar1 Tbsp maple syrup ¼ cup apple cider vinegarFor the Burger:8 oz 80/20 ground beef, divided into 4 oz ballsHamburger bunCheddar cheese Sliced pickles Burger sauce of choice InstructionsAdd the diced bacon to a large skillet and set over medium high heat. Cook, stirring occasioanlly until the bacon is rendered and starting to get cripsy, about 6-8 minutes. Add the diced onion and stir to combine, continue cooking for 5 minutes until the onions are soft and beginning to brown. Add the kosher salt, pepper and onion powder and stir into the onion and bacon mixture, add the worcestershire sauce, brown sugar, maple syrup and apple cider vinegar. Continue to cook, stirring constantly until the mixture comes to a bubble, about a minute, then reduce the heat to medium low and continue cooking until the liquid is mostly absorbed and the bacon and onions have a jam-like consistency, about 5-7 more minutes. Remove the bacon jam from the pan and into a heat proof vessel, set aside until ready to use. To make the burger: Place a large heavy skillet or cast iron pan over high heat. Once the pan is hot, add the 4oz beef balls and place a piece of parchement paper over top. Smash down the patties with a heavy spatula or smaller bottom of a pan until they are very thin, remove the paper and immediely season with salt, pepper and garlic powder. Let the patty book until the edges begin to brown, about 2-3 minutes. Flip over and immedietly top each patty with a slice of cheese. Cook for another 2 minutes then stack the patties and remove from the pan. Sauce the bottom of the burger bun, add slied pickles, then the double cheese patties and a heaping spoonful of bacon jam. Serve immediely and enjoy. NOTE: this recipe makes bacon jam for 4-6 servings, it can be stored in the fridge for several days in an airtight container.
