CHICKEN TINGA MEAL PREP Oct 1 Written By Eleanor Debel PrintCHICKEN TINGA MEAL PREPYield 4Prep time15 MinCook time15 MinTotal time30 MinIngredients1 bay leaf 2 garlic cloves ½ onion, cut into chunk2 Tbsp chicken bouillon or 1 Tbsp salt 1 ½ lb boneless skinless chicken breasts (about 4 pieces) Tinga Sauce:2 large tomatoes, cut into chunks ½ onion, cut into small chunks 3 garlic cloves ½ tsp salt ¼ tsp black pepper ½ tsp dried oregano1 tsp chili powder 1 cup chicken cooking liquid or chicken broth 3 chipotle chili peppers in adobo Chipotle Sour Cream:½ cup sour cream ½ cup yogurt 1 tsp white vinegar¼ tsp salt ¼ tsp chili powder To Serve:2 can black beans, drained and thoroughly rinsed 2 cups cooked corn 4 cups cooked white rice InstructionsFill a large pot with about 2 quarts of water (8 cups) and set over high heat. Add in the bay leaf, garlic, onion, chicken bouillon or salt and bring to a boil. Add the chicken breasts and turn the heat down to medium low, simmer for 10-15 minutes until the chicken is cooked through. Remove from the pot and set aside to cool, reserved the cooking liquid. In a blender combine the tomato, onion, garlic, salt, pepper, oregano, chili powder, chicken stock and chipotle peppers. Blend on high until smooth, then pour the sauce into a large saute pan and set aside. To the same blender you made the sauce in (without rinsing it) add the yogurt, sour cream, vinegar, salt and chili powder. Blend until well combined and transfer to a container to store in the fridge until ready to use. Shred the cooked chicken breasts and then add it to the sauce and set over medium high heat, stirring constantly until the chicken and sauce are warmed through and just bubbling. Simmer for a couple minutes then set aside. To prep your meals: place 1 cup of cooked rice into a container, top with ¼ of the beans and corn, then ¼ of the shredded saucy chicken, and top with a drizzle of chipotle sour cream.
