PERFECT PAN SEARED SALMON Nov 8 Written By Eleanor Debel https://www.youtube.com/shorts/aeeoXWXsVrQPrintPERFECT PAN SEARED SALMONYield 1Prep time5 MinCook time8 MinTotal time13 MinIngredients2 four ounce skin-on salmon filet 1 tbsp olive oil 2 Tbsp butter 1 Tbsp fish seasoning or spice blend of choice ½ lemon InstructionsPlace the salmon onto a paper towel lined tray and pat all the sides dry, especially the skin side to ensure you get a crispy skin and prevent the fish from sticking to the pan. Season the fish with salt on both sides and set aside. Place a stainless steel saute pan over medium high heat and allow it to heat up for a minute or two until water bounces off the surface and it’s nearly smoking but not burning. Add the olive oil to the pan then place the salmon in, skin side down. Cook the salmon UNDISTURBED for about 2-3 minutes on medium high heat, do not try to flip the fish until the skin is released on its own and you can shake the pan and the filets move with it. You’ll see the flesh begin to cook from the bottom when this happens and it will make for perfectly cooked fish with nice crispy skin. When the skin has released from the pan, flip the fish and immediately add the butter to the pan along with the seasoning you prefer. Reduce the heat to medium, then once the butter is melted tilt the pan toward you and using a large spoon, baste the salmon with the melted seasoned butter for about 2-3 more minutes to cook the salmon through. Remove from the heat, squeeze the halved lemon over the fish and serve with your favorite side.
