Season the fish generously with salt, and set aside into the fridge to dry out slightly for 1 hour. Preheat your frying oil to 325 F Set aside ¼ cup of flour in a shallow dish then add the remaining flour, rice flour, baking powder and all the spices to a large bowl. Whisk to combine then whisk in the club soda until the batter is smooth. This batter should be runny but fall in ribbons, similar to the consistency of crepe batter. Add more club soda if it seems too thick, or a little flour if it needs some more body.Remove the fish from the fridge and once again pat any liquid off the fish to ensure they are very dry, this will help the batter stick. Dip the fish into the plain flour you set aside and then into the wet seasoned batter. Gently place into the fryer, fry until golden brown and cooked through, about 6-8 minutes. Remove to a tray and immediately season with salt. In a large saucepan add the butter and set over medium heat. Once the butter is melted add in the cayenne pepper and let it toast for about 10 seconds before adding the hot sauce and honey. Stir to bring the sauce together then remove from the heat. Brush the fried fish all over with the hot honey sauce and serve with your favorite creamy dipping sauce.
