BUFFALO CHICKEN TACOS Apr 20 Written By Eleanor Debel https://www.youtube.com/shorts/681I74ALBsoPrintBUFFALO CHICKEN TACOSYield 4-6Prep time10 MinCook time30 MinTotal time40 MinIngredients2 lbs chicken breast, tenders or whatever cut of chicken you preferAvocado oil cooking spray 2 Tbsp sweet heat rub seasoning blend (or any blend you like best) ¼ cup buffalo sauce ¼ cup queso cheese (or shredded cheese of choice) 1 tbsp hot honey 2 Tbsp finely chopped cilantro 8 corn tortillas 1 cup shredded mozzarella Queso or ranch for dipping InstructionsPreheat your oven to 375 F.Line a sheet tray with a wire rack and place the chicken pieces in an even layer onto the rack. Spray the chicken evenly with cooking spray then season with one tablespoon of sweet heat rub, flip the chicken and repeat on the other side. Place the chicken into your preheated oven and cook for about 20 minutes if using chicken tenders, longer for breasts and thighs (cook your chicken until an internal temperature reads 165 F.)Let the chicken cool slightly then transfer to a cutting board and shred or chop into bite size pieces. Place the chopped chicken into a large mixing bowl. add the buffalo sauce, queso hot honey and finely chopped cilantro and stir until evenly combined. taste and adjust seasoning.Place a large griddle on medium Heat and add your tortillas in a single layer, flip and warm through for about a minute. divide the shredded mozzarella cheese evenly over all the tortillas then add a layer of seasoned chicken to one side of each tortilla. Once the cheese is melted, fold the tortillas over and toast on either side until golden brown and melty.
