KIMCHI FRIED RICE Sep 8 Written By Eleanor Debel PrintKIMCHI FRIED RICEYield 4Prep time10 MinCook time10 MinTotal time20 MinIngredients1 cup chopped kimchi 1 cup beef bacon, diced 1 tbsp minced garlic 2 cups white rice, leftover or cooked and cooled ½ tsp sesame oil ½ tsp gochugaru (ground korean chili flakes) ½ tsp gochujang ¼ tsp sugar ¼ tsp MSG ½ cup nori sheets (dried seaweed) crushed up or choppedSunny side up egg Optional: ½ cup shredded mozzarella or jack cheeseInstructionsHeat a large skillet over medium high heat and add in the chopped beef bacon. Cook, stirring occasionally until crispy and fat is rendered, then remove from the pan with a slotted spoon and leave the rendered fat in the pan. In a bowl whisk together Return the pan to the heat and add the minced garlic and chopped kimchi, let cook for 1 minute until the garlic gets fragrant, then add the cooked white rice and press into an even layer in the pan. Let cook undisturbed for 3-4 minutes to crisp up the rice then stir the rice around the crisp up more of it and pour in the sauce and stir everything together, cooking for another 2-3 minutes until the rice absorbs all the sauce. Remove the rice from the heat and taste to adjust the seasonings. If using cheesy, sprinkle on top and let melt before stirring rice. Stir in the crumbled nori sheets and serve with a fried egg on top.
